Mass spectrometry (MS) has gained popularity in metabolomics due to its unparalleled sensitivity and specificity, high resolution and wide dynamic range. MS-based metabolomics techniques have driven the emergence of a new omics sub-discipline-foodomics. In this review, we present the current state of MS-based metabolomics and typical applications in food science related to food composition, food safety, quality, nutrition and health.
