Chemical characterization of Madonie (Sicily) manna samples extracted from Fraxinus angustifolia and Fraxinus ornus (Oleaceae) cultivars. - In this paper are reported the results of the chemical analysis of manna in cannolo, in sorte and in rottame samples produced during the period 2004-2006 in the area around Castelbuono and Pollina (Palermo - Italy). Particularly, six cultivars of Fraxinus angustifolia subsp. angustifolia and one of F. ornus have been investigated. The analysis results show mannitol as the most abundant chemical constituent and its percentage range is related to the Fraxinus species, the cultivar, the Fraxinus trees geographical position, the year of its production and the sampling time. Generally, according to the time during which the manna is present on the plant, there is a decrease of mannitol and an increase of monosaccharide and oligosaccharide amounts. Regarding the mineral composition, the mostly present element is Potassium. The analysis of volatile constituents of fresh manna allowed the identification of three main components, i.e. methyl palmitoleate, ethyl palmitoleate and the terpene hexahydrofarnesol, with traces of other volatile compounds; it is already known that the palmitoleic acid is an olive oil component. As regard to the manna chemical stability, it has been observed that the longer is the harvesting time delayed, the greater are the chemical changes. Particularly, the mannitol amount decreases and the carbohydrates increase. The ageing of the harvest brings meaningful changes to the manna coumarins due to chemical transformation to which these substances are subjected. Two new coumarins have also been isolated from a manna in rottame sample
